Core Roasting Parameters

  • Charge Temp: 195°C – 205°C (383°F – 401°F). Use a lower initial heat than Arabica to protect the bean surface from scorching.

  • Drying Phase: 5 – 6 Minutes. Maintain a steady, extended drying phase to ensure even heat penetration into the dense core.

  • First Crack: Quiet & Subtle. Expect a muffled "thud" at a higher temperature than Arabica. Do not rely on a loud "pop."

  • Development (DTR): 20% – 25%. A longer development time rounds off bitterness, transforming acids into deep dark-cacao sweetness.

  • Drop Level: Medium-Dark (Full City). Target 220°C – 225°C (428°F – 437°F) for a smooth, chocolatey profile with zero "rubber" notes.

  • Resting Period: 5 – 7 Days. Essential for degassing. Peak flavor and mouthfeel stabilize one week post-roast.
